March 1st Giveaway

Call this optimistic but, I really feel as if Spring is in the air.
We went to Washington, DC this weekend to introduce the kids
to the wonderful museums and sites. It was a great trip and made
even better because we could walk around with no jackets on
and feel the promise of milder, sunny days.

To celebrate Spring and say farewell to Winter I'm offering
my Winter Squash poster collaboration with Greenmarkets.
The poster measures 18 x 24 and will be available in my shop
on Friday but, to win one please place a comment below
on one of your favorite way to cook one of the squashes
illustrated on the poster.
The lucky winner will be randomly picked on March 8th.

  4. I am a HUGE winter squash fan. When I'm aiming for simple, I just cut an acorn squash in half, remove the seeds, put a spoonful of butter and some brown sugar in the hollow and roast. If I'm more motivated, I peel and chop whatever kind I've got around, toss it with olive oil / chili powder / smoky paprika / cumin seeds and roast it. I'm also a big squash soup fan.

  5. What a beautiful poster! One of the simplest and tastiest ways I use squash is to cut a butternut and an acorn squash in half, remove the seeds, and bake both cut side down on a baking sheet at 400 degrees for 35-45 minutes. Then I scrape the squash into a bowl and mash it. I usually add nothing but some pepper at the table.

  10. Simplest, tastiest and recurrent squash dish or meal in my kitchen has to be spaghetti squash. Halve it, roast it, scoop it and top it with diced tomatoes and whatever veg in the fridge. Little olive oil and shaved parmesan and I'm good. I don't even miss real pasta! Thank you for opp to win the fab poster...

  15. Acorn Squash: all you need to do is cut it in half, add some butter, brown sugar, a dash of salt and pepper and stick it in the oven for a bit. Super yummy!

This poster is a great reminder of the warmth and comfort winter squash brings, and I need it in my dining room!   39. I've really discovered my love of all varieties of squash this winter, but my favorite hands down is a roasted acorn squash filled with a delish stuffing of couscous, dried cranberries, walnuts, and sweet potatoes.

  52. Butternut or delicata: peel, remove seeds, chop into cubes. take onions and chunk them up. Peel a bunch of cloves of garlic. Add some soy sauce, roasted sesame oil, hot red pepper sauce, salt, pepper; mix everything together and then roast in the oven until everyone is squishy and caramelized. Sometimes I do this with sweet potatoes instead of squash.

    This past summer, we grew a bunch of winter squash called trombocino - like a butternut crossed with a giraffe - they have a very long and seedless neck. They're really quite goofy looking.

  69. Glad I found your blog! Beautiful illustration and very beautiful poster! My favorite recipe is called "carnival stuffed squash". Stuffed with rice, spring onions, garlic, celery sticks, tomatoes, pine nuts, sultanas and roasted. Full of vibrant colors and textures. Yum!

  86. my favorite way to cook acorn squash is the way my mother has been doing it my whole life. Cut the squash in half, remove the seeds, and put 1 T. brown sugar and 1 T. butter in the hollow. Wrap in tinfoil and bake at 375 until the squash is completely soft, and the butter and brown sugar are soaked into its delicious insides. love the poster, and am so glad to have discovered your blog!

  112. for a nice autumn meal, i love acorn squash, cut in half vertically and roasted. fill it with a stuffing made from a really rustic bread, onions, lots of thyme, toasted pine nuts or even pecans, and tiny diced spanish chorizo, bound with a little stock. bake a little just to set. yum!

  121. I love squash! My favorite way to cook Acorn squash is to peel it (a pain I know, but such a treat) and cut it in cubes. In a casserole dish, sprinkle some olive oil, some parsley and at least 3 cloves of garlic (probably more really) and cook it at 350 or so until it's soft. Mmmmm.

    We eat a lot of squash around here in the winter... my favorite might be to thinly slice acorn squash, toss with olive oil, sprinkle with salt and pepper, and roast hot until it starts to turn a little brown and crispy.

    One of my favorite acorn squash recipes is to cut it in half, clean, add a dollop of Irish butter, a sprinkle with dark brown sugar and then roast. I serve it with it with a spoonful of Greek yogurt in the middle. Creamy and sweet! I eat if for breakfast, for dinner or for dessert...

  137. The poster is fabulous. My favorite squash recipe is a non-recipe. I cut in half, rub some EVOO and salt and pepper and roast until done. Serve hot or room temp or cold in a salad. Sometimes there is nothing better than the good earth taste of squash and nothing else.

  140. I cut an acorn squash in half, season with salt, and place face down, microwaving about 7 min. or so. Meanwhile, saute up some onion, a little bacon, green apple cubes, ham cubes, in an apple cider sauce and put that in the well of the squash. Delish!

  153. Buttercup. Baked, insides scooped out. Mix sauteed (in copious amounts of butter) onion, apple, and cranberries with the baked innards and put back in the shell. Beautiful and delicious.

  156. my favorite is when my grandma used to boil the "calabasa"in water with brown sugar, then eat smashed it in a bowl with milk, and a little bit of the brown sugar liquid. so yummy, and it bring so many good memories! comfort food indeed!
