November 1st Giveaway
It's high time for another giveaway and what better
gift to offer than my 2011 Calendar Tea Towel.
As always you have to do just a little bit of work for this.
My family are eating a great deal of vegetable soup these
days and I'd love to know whether you are too.
Please leave a comment below on your essential 3 vegetables,
minus the all important mirepoix (carrots, onion, celery),
that make your soup particularly yummy.

ReplyDeleteThe holy trinity of soup: Mirepoix (onion, carrot, celery). Then I make chicken chili: stock made with the carcass of a smoked turkey (from the farmers mkt), chicken, peppers, white beans.

ReplyDeleteConsidering I was just making squash soup last night...I'd say onions, carrots never hurt, and a little peppery heat from chilies.

three things in a soup that I like are roasted cauliflower, caramelized onions, and roasted garlic! :)
ReplyDeleteBacon (in any form) onions and crushed red pepper....then you pretty much put any veggie and stock in and it's amazing!!

ReplyDeleteHi Claudia (We're the folks you met who are moving to West Virginia, so trust me, we will be making lots of soup.) For me, the most warming soup is chicken stock base with white beans, escarole and parmesan.
ReplyDeleteIt has just gotten cold here so soup is on the stove every other night and my favorite right now is a yellow split peas soup with shredded carrots, sweet potatoes, and chopped kale. Sounds like dinner tonight!

hmm, aside from those three I'd have to go with red pepper, garlic, and tomato. Mmm, reading all of these makes me want to do some soup experiments!

ReplyDeletekale is good. sausage is good. fennel is not good, but when you combine it with kale and sausage, the ingredients come together, three amigo-like, to form a taste sensation capable of freeing a mexican town from the clutches of thuggish overlords.
ReplyDeleteHmmm... excellent question - depends on my mood but usually mushrooms (not really a vegetable?) some kind of green (kale or spinach), corn (especially if it is fresh) and zucchini.

ReplyDeleteI left work early yesterday feeling a cold coming on. Bought a whole chicken at the market and made soup: chix, onion, carrot celery and potato. Pretty standard. But the key three ingredients:

2) dill
3) TONS of ginger
Squash, kale, and corn!

ReplyDeleteCauliflower (roasted) Swiss chard. Fingerling potatoes. All over these! Love your illustrations...
ReplyDeletesweetcorn, added at the end to give a blended soup a gorgeous texture. brocoli, the stalk too, just peel and saute in butter with the base veggies. swede, I love swede (I am scottish, it figures) roast it off with some butter and honey then add to soup.
