April's First Recipe

This month Sung has created a wonderfully simple
accompaniment to enhance a Spring dish.

Awakening Savory Herb Mix

This mix of powerful antioxidants also known as za'atar, is reputed to awaken the mind. Middle eastern cultures encourage their children to eat pita with this spice mix before exams. Moreover, thyme encourages the flow of digestive juices to your stomach, so it’s a great to start a meal or even to start the day. Use this versatile mix as a dip for bread and fresh veggies; sprinkled on meats, eggs, and salads; or coat a log of tangy goat cheese to create herbed rounds.

* 1/2 cup thyme
* 1/4 cup marjoram or oregano
* 1/2 teaspoon sea salt
* 2 tablespoons sesame seeds

Directions

1. Toast sesame seeds on skillet over medium high heat until slightly golden.
Set aside to cool.

2. Carefully take leaves off thyme and marjoram off the woody stems.
3. Combine all ingredients in a mortar or food processor
(with a few quick pulses) to create a slightly damp mixture.

4. Place in an airtight container; can be refrigerated for up to 2 months.
